This is probably the silliest post ever. But I couldn't help but notice just how many pictures of food I have taken (mostly with my iPod) over the past year or so. So I've decided to combine them all into one post. And just comment under each picture. Can you tell I love to eat?
My huge oatmeal cookie. I found the recipe on pinterest. I liked it, but didn't love it. Nobody else except Elisa even bothered to try it. I wish the cookie part was a little softer, and that I had made smaller cookies rather than this ginormous thing. Being so big made it hard to eat and share.
coconut curry. Yum!
The best chicken salad sandwich ever. Lots of various components, but they all come together in complete, delicious harmony. No celery either :) I do not like celery!
My dinner of appetizers. Fried cream cheese, chive, and red pepper won-tons and my favorite veggie side dish ever: baked Parmesan zucchini chips!
Jambalya. It thought it was good, but it was a bit too spicy for Erik. It gave him some bad heartburn that night
Pumpkin curry soup. I made it from a canned jar of pumpkin my dad canned. It was soooo good. Also, home-made soft pretzels. I used a little bit of wheat flour so they weren't as soft and fluffy, but they were still good. Kind of a lot of work to make.
My pumpkin pie. Probably the best I've ever had, not to flatter myself. I really like the crust recipe I used and the Target brand (Market Pantry) canned pumpkin. I made another pie since then using the Kroger brand. It turned out bland and brown...yuck.
Indian food. Super easy to make, especially when using a jar of pre-made curry. I like the brand I get from Target the best (Archer Farms). I've tried making my own Naan bread before but mine never turns out very soft, so I just buy it from the store. Easier and better that way.
Homemade hummus. Much, much cheaper than the store. Pretty good, and its easy to make. I'm supposed to use Tahini but I don't want to spend $$ on something I rarely use. Tahini is like peanut butter, except instead of peanuts its sesame seeds. So I just used a tiny bit of peanut butter, and it turned out okay. I like the HEB brand hummus the best, if I ever buy it.
A random meal of bean dip and delicious oatmeal.
My 30th birthday dinner, from Jimmy Changas. I love this place, especially since the kids can go off and play and let me eat my food in peace!
This is the Thanksgiving meal from Gabe's school this last Thanksgiving (2014). It wasn't the best food but it was fun to sit with Gabe at lunch. He was so excited to eat lunch with me and Elisa.
Blue raspberry cookies. I got the box on clearance, and I thinking they're super yummy. A little bit too sweet though. Gabe absolutely loved these since his favorite color is blue!
My coffee cake. No coffee in it, in fact, I can't even remember if these are black berries or raspberries in the cake. No matter, it was delicious.
The Anesthesia graduation dinner. I had a fun dinner with Erik, even though initially I wasn't too interested in going. It was a pretty good dinner, although my meat was NOT cooked enough. I don't like to drink raw animal blood, sorry.
My Cafe Rio pork cooking. I don't make this meal very often because it is expensive and A LOT of work. It makes a lot of meals though, and its absolutely delicious.
Who said healthy can't taste delicious? My oatmeal. I can't fathom how Erik doesn't like oatmeal.
Bountiful baskets. I pay $18 for a big box of assorted fruits and veggies. I loved doing this, its a great way to eat healthier and try out new foods and recipes. I've stopped getting the baskets, but I can't wait to start up again!
My donut cake. The kids though this was the best thing ever. And so did I--nothing better than chocolate fudge frosting on a fudge cake!
Delicious Strawberries and cream sour cream pancakes. I like cream.
Pineapple-banana smoothie. I used almost an entire pineapple for this smoothie! Turned out super yummy.
Here is my kale-phase. I'm trying to eat a little healthier since I eat basically no veggies. Kale is cheap, versatile, and not too bitter (it tastes a little bit like grass). This is my own invention, kind of. Its just hash browns, bacon, and kale fried in olive oil with chopped onion and some garlic, with a fried egg over it. Yum!
Another kale invention of mine. Fried kale and Monterrey jack cheese go really well together!
Between myself and this girl, cupcakes don't last very long!
A Pinterest fail. This was supposed to be a quick and easy way to cook spaghetti squash, but it didn't work at all. What a waste of a spaghetti squash!
Another Pinterest recipe: Lemon-herb chicken. It was okay--little too sour for I thought. Of course it may have been that I used grapefruit instead of orange because I didn't have any oranges. I might try it again (the right way) someday!
Well that is it for my food posting! I'm always trying out new recipes or just making up my own; these pics are just a small sample of what I make. I don't know why I'm not obese! :P
I lost track of your blog for awhile but just found it again. Glad you are still posting (so many friends no longer post). I do bountiful baskets too! I've been doing it for over a year now and I'm addicted to it.
ReplyDeleteIt's great that you love cooking and trying out new things that are healthy. I would love to taste some of these foods you make. I cut spaghetti squash in halves or fourths, and cook it a long time in the microwave with water on it until it's done, then take a fork and string it, adding spaghetti sauce on top. I got a box of pink lemonade cookies on clearance from Walmart, and I was the only one who ate them, a little overcooked, and different. I've never tried curry, but I'd like to try your Thai and Indian food, pumpkin soup, etc. and fried zucchini that I love.
